Irish Coffee Recipe
Ingredients
I measure of Bailey's Irish Cream
2 tsp sugar (demerara if available)
Freshly made hot black coffee
2 to 4 tsp whipped cream
Directions

Pour the Bailey's Irish Cream into a warmed 7-ounce
Irish Coffee glass and add the sugar.

Fill with the hot fresh coffee to within half an
inch of the top of the glass.

Stir until the sugar is dissolved.
-
Spoon the whipped cream on top of the hot coffee and
serve immediately.

Traditional Irish Dinner -
Corned Beef and Cabbage
Try this traditional Irish recipe for your St. Patrick's Day
Dinner!
Ingredients
1-4˝ pound corned beef brisket
3 allspice berries
2 bay leaves
1 teaspoon mustard seeds
1 onion, quartered
1 bulb garlic, cut crosswise so each clove is cut in half
1 tsp black peppercorns
1 medium head cabbage, cut into eighths
1˝ pounds small (about 1-inch diameter) red potatoes
Instructions
Rinse corned beef under running water. Place in large pot.
Add allspice, bay leaves, mustard seeds, onion and peppercorns.
Add just enough water to cover the corned beef.
Bring to a boil, skim any scum that rises to the top if necessary.
Reduce to a simmer, cover and cook about 4 hours, (will get
tender, use a fork to test)
Remove from heat / keep warm.
Strain out the spices and vegetables from cooking water, (keeping the water
and throwing out the spices and vegetables).
Add cabbage and potatoes and bring to a boil
Reduce to a simmer and cook 30 minutes.
Strain the majority of the water from the cabbage and potatoes and serve them
along side the corned beef.

Claddagh

Although
the Claddagh ring was first produced in the 17th century during the reign of
Queen Mary II, the elements of the Claddagh design are much, much older. The design of
this ring symbol and the customs associated with it stemmed from the Irish fishing village of
Claddagh which is just outside the old walls of the city of Galway
Ireland
The facets of the Claddagh symbol correlate to the qualities we find in
meaningful relationships - friends and lovers. The Heart means Love ~ he
Hands mean Friendship and the Crown means Loyalty. The idiom which is associated with
this symbol when one gives the ring to another is.. "Let
love and friendship reign."
Tradition tells us that when someone gives it to a single friend, the friend
normally wears it on their right hand on their ring finger and the design points
outward. When worn in this way, it signifies that the wearer is single and
available and may be looking for a relationship with another.. TURN
the ring with the design facing inward, (the crown top facing toward the hand -
not away), signifies that the wearer is single, but in a relationship and the
wearer's heart is captured - taken! When
the wearer of the Claddagh ring is engaged to be married - it is then worn on
ring finger of the left hand with the design, (the crown top) facing outward
(away from body/hand). Finally, when it is worn on the left hand, ring finger
and the crown is facing in, (toward body/hand), it means that the wearer is
married. Popular world
wide (since the potato famine in the 1800's sent a good deal of the
Irish off to America and other parts of the world), the Claddagh is well
know. In addition to being a gift from a friend and/or a lover - the
ring has been often an heirloom in families and traditionally mothers
pass their Claddagh down to their daughters.
